Casale de li Tappi

Corallina – premium “cinghiato nero” pork salami

Traditional salami from the city of Norcia, It is made with the shoulder meat parts of the “maiale cinghiato nero”, an ancient and rare pig specie from the appenine region. The pigs are born and bred on the “Casale de Li Tappi” farm , free to roam and forage and fed exclusively on barley, maize, bran and broad beans.

The shoulder meat is ground and seasoned with salt, pepper, garlic, and pieces of lard (7%) and then inserted in a natural casing called “budello corallo” from which this salami derives its name.

All these steps are made within the farm’s own butchery, who raises all its livestock and manufactures products strictly with its own free-range animals.
