Because of its long maturation process, Balsamic Vinegar of Modena is not at risk of any particular alteration during storage. To prevent its characteristic aroma from being altered, it should be kept away from perfumes or from substances with pronounced smells.
Balsamic Vinegar of Modena IGP differs from wine vinegar in the balanced composition of its constituent elements. IPG specifications require that the cooked or concentrated grapes must come only from seven varieties, all of them typical of the Modena and Reggio Emilia area: Lambrusco, Trebbiano, Sangiovese, Albana, Ancellotta, Fortana, and Montuni.
This vinegar possesses six medals: one for each two years of ageing, thus making it a 12-year-old vinegar. An aged vinegar differentiates itself from younger ones thanks to its denser consistency and sweeter taste. Such characteristics are obtained thanks to the natural ageing process which takes place in fine-wood barrels.
