Ciabrot (whose name in our Occitan language means ‘little goat’) is a cheese based on an ancient traditional recipe; it has a smooth, thin rind, with a colour ranging from light grey to dark grey depending on the degree of maturation.
This cheese has a slightly pitted texture, an ivory-white colour, and is initially buttery; as it matures, it becomes firmer. It has a milky, buttery flavour in its first month and becomes more savoury as time goes on. It is matured in natural caves on cherry wood planks, which harmonise its flavour.
