Castelmagno is an ancient cheese, and is still produced according to the original recipes, which include the fact that cow, sheep and goat milk are used in proportions according to the unique secret recipe of every producer.
The quality of milk, the processing methods and maturation in the historic stone cellars are incredibly unique, so much so that any single shape is potentially marbled with the noble blue mould of other blue cheeses, without the addition of its starter. However, this is still completely unpredictable, and even the most experienced cheesemaker cannot tell if a shape is marbled until he cuts it open.
The care of every detail, from the resting of the curd under whey to the use of wooden moulds, allows us to offer you a taste of a cheese that is otherwise unrepeatable.
