Armini Salami

Salami “Punta di coltello” minced by hand

For tree generations, the Armini family have been providers of amazing salami and cold cuts in the city of Alba, in the heart of the Langhe region, where people are known for their knowledge of meat and wine.

The most traditional and noblest of all salami, the “punta di coltello” (knife-point), is made from the leanest part of the shoulder and the top of the ham. It is the only salami processed by expertly chopping the meat by hand with the point of the knife instead of grinding it, hence the name knife-point salami. The consistency is peculiar, but the flavour is absolutely worth it.
