This is the perfect rice for risotto. It would be a complete waste to try and use it for different recipes.

To make a simple but delicious risotto, toast the rice in a dry pan on high heat for a couple of minutes, then add a glass of dry white wine. When the alcohol has evaporated, lower the heat and add some warm chicken stock. Let it boil slowly and stir frequently, while adding stock or water as needed so that the rice is always barely covered in liquid. Cook for 15–20 minutes until it is al dente, take off the heat, add butter and grated parmigiano, and stir vigorously one last time. Let rest for a minute before serving.

You can add pretty much any ingredient you want through the cooking process, taking care that they come to cooking at the same time as the rice.

The king of risotto rice, Carnaroli is a medium-grained rice grown in the Pavia, Novara and Vercelli provinces of northern Italy.
