Cru di pecora nera is a sheep cheese that revives an ancient recipe from the farming tradition.
Its rind is dark in colour due to maturing on chestnut wood planks; the cheese itself is ivory-coloured with a grainy texture, and has the intense flavour typical of sheep’s milk cheeses, with an almondy aftertaste.
