Our “Pancetta” is obtained from the belly of pigs that are born and bred on the “Casale de li Tappi” farm and fed exclusively on barley, maize, bran and broad beans.

Pork belly, known in Italy as “pancetta tesa” is the equivalent of bacon. It comes from the low-fat meats of the pork’s belly. To obtain a good pancetta, it is important for the meat to be properly cut by the master butcher, as well as properly seasoned with the right quantities of salt and pepper. The meat is then left to season for a period of roughly 40 days.
