This traditional sheep cheese is produced in the hills of central Italy, and is the cheese used the most in Roman cuisine, especially for the pasta sauces, but for many other recipes. It is well known for its sharp savoury flavour and its surprising melt-in-your-mouth texture.
The wheels are produced by artisanal cheesemakers in the area of origin and then refined by our dear friends at Cantarelli, who take care of the final ageing in their traditional stone caves.
