To put it simply, Scamorza can be described as a drier mozzarella. To be more precise, it is a pear-shaped pasta filata cheese that has a compact and elastic/stringy texture. The taste is slightly sapid with a delicate and pleasant milky flavour.
The smoked version is probably the most common. A straw fire is used to give it colour and an intense smoky flavour, that can give a boost to any recipe.
