This salami is made from pigs born and bred on the “Casale de li Tappi” farm and fed exclusively on barley, maize, bran and broad beans. Their meat is finely ground and seasoned with salt, pepper, and garlic.
This salami originates from the village Campotosto. The original name is “mortadella di Campotosto” but, they are colloquially called “coglioni di mulo” (mule’s balls) due to their oval shape.
The meat is very lean, but it has a typical strip of super flavourful and soft lard that runs through the middle.
