This is a raw sausage and must be cooked before eating it.

To cook it, remove it from the vacuum pack and poke a few holes in the casing with a toothpick, then tightly wrap it in aluminium foil. Simmer in water, for at least a couple of hours, until the meat is tender. Let it rest for a few minutes before cutting it in slices about half cm thick, remove the casing and serve.

Traditionally, it is served on new year eve, with stewed lentils.

“Cotechino” pork sausage for cooking

From the Apennines valleys of the lower Po region, comes this traditional raw pork sausage, handmade by the master butchers at Casarini.

This sausage is made with pork meat 100% bred in the Casarini farm, where all animals live a happy life in open pastures, free to roam, forage and grow naturally.

The meat is ground, seasoned, and stuffed in a thick natural casing, with the addition of finely ground pork skin; so that when it is cooked, the meat gets filled with natural gelatine making it incredibly rich and juicy.
