To put it simply, fresh Scamorza can be described as a drier mozzarella. To be more precise, it is a pear-shaped pasta filata cheese that has a compact and elastic/stringy texture. The taste is slightly sapid with a delicate and pleasant milky flavour.
It is a highly fresh product and since it does not have the water to keep it moist like a traditional mozzarella, we recommend eating it within a couple of days from the delivery.
